Andouille sausage is a smoked garlic sausage that comes to us from Cajun cuisine. A little bit spicy and lot of bit delicious, it is a key ingredient in jambalaya, gumbo, and red beans and rice. It is equally tasty sliced and fried in a pan.
Our pork is raised in the sunshine out on the pasture where they eat organic feed and spend their days rooting and wallowing.
